Egg plant (Solanum melongena L.) is an important solanaceous vegetable crop in many countries and India. It is highly productive crop, the fruits are consumed as cooked vegetables in various ways, and dried shoots are used as fuel in rural areas. Egg plant is a good source of minerals and vitamins A and B, rich in total water soluble sugars, free reducing sugars, amide proteins among other nutrients and is an appetizing vegetable. Egg plant is a versatile crop, adapted to different agroclimatic regions. However, the consumer preference is highly segmented and varies from state to state and within the state.
